Crunchy fried tortillas stuffed with potato and chorizo make these taquitos a great shared appetizer or a whole meal to yourself. This light and refreshing veggie-based ceviche is a great healthy snack on a hot day. It comes from Alejandra of Piloncillo & Vainilla (Brown Sugar and Vanilla). Watch her Instagram Reel below to see how she transforms a mixture of quinoa and veggies, including cauliflower and carrots, into fish-less ceviche. You can find the full recipe here.
Dora (@dorastable) is known on TikTok for sharing delicious authentic Mexican recipes without meat. She makes these enchiladas with green sauce look pretty easy. The tortillas are filled with a mixture of beans, corn, and onions before being smothered with the sauce. You can always add some cheese to the inside, too.

Pollo asado is a classic grilled chicken dish known for its savory spices. This tofu version from Viva Verduras (@vivaverduras) on Instagram brings all the flavor without the meat. The tofu is put in the freezer twice to give it more texture, and the rich marinade really brings in all of the chipotle flavor of a great asado.
